No Bake Date Balls

No Bake Date Balls - good to keep around for a quick/healthy snack!


Pulse together until it forms a ball in your food processor:

10 dates (pits removed)
1 cup uncooked oatmeal
1/2 cup coconut flakes
1/4 cup nut butter (almond/peanut/cashew etc…)
1/4 cup hemp seeds or protein powder

small amount of rice milk, as needed if its too dry

optional:
separately fold in craisins, raisins, carob nibs or mini chocolate chips, honey, maple syrup.

roll into balls

optional:  roll balls in coconut flakes, carob nibs, cocoa powder, mini chocolate chips or sprinkles

store in refrigerator (can also be frozen)


NOTE:  Pictured is also a chick pea snack.  These were canned chick peas - liquid removed and dried as much as possible - tossed in some olive oil and seasoning of choice (ex:  taco seasoning, chili seasoning, maple syrup/salt) - baked on a cookie sheet at 350 until crispy - stir periodically.  About 1/2 hour.  Enjoy!
